Maple Bacon Jam

Who doesn’t love bacon? Maple and bacon bring together a hearty, sweet, and savory jam that pairs perfectly with crackers. Works well as a sandwich spread, on toast, or with a bagel.

Maple Bacon Jam

Ingredients

Part A

1 lb. (450 g) thick-cut bacon, diced

Part B

1 large onion, finely diced
3 cloves garlic, minced

Part C

½ cup strong brewed coffee (or 2 shots espresso for intensity)
⅓ cup pure maple syrup (preferably dark/amber)
¼ cup brown sugar (dark preferred)
¼ cup apple cider vinegar
½ tsp smoked paprika
¼ tsp chili flakes (optional)
Fresh cracked black pepper, to taste
Pinch of salt (season last—bacon is salty)

Directions

  1. Render the bacon (Part A) – cook bacon in a heavy pan until crisp and browned
  2. Remove bacon with a slotted spoon
  3. Reserve about 2 Tbsp. bacon fat, discard the rest (or keep in sealed jar in
    refrigerator for other things)
  4. Add Part B and cook until deeply softened and lightly caramelized.
  5. Add Part C, bring to a gentle simmer, reduce uncovered on low for 30-40 minutes
    stirring constantly.
  6. Add a splash of coffee or water if it gets too thick
  7. For a spreadable “jammy’ texture, pulse 3-4 times in a food processor – DO NOT
    puree – leave texture
  8. Cool completely, freezes beautifully.

Chef's Tips

Add 2 tsp. Dijon for more depth.
Sub chipotle puree instead of chili flakes.
